Okay, just to start with: I’m using a rather broad definition of Martial Arts here. What I mean is fights that are artfully choreographed, not necessarily that it’s flawless karate/jiu-jitsu/whatever. Most are done with some kind of weapon.
And here shall be a warning: some of these scenes are pretty gruesome. If you’re squeamish, better skip this post.
Well, with that out of the way, let’s get to it.

For most creative use of a hose.

For one of the most interesting stripteases ever.
8. Christian Bale and Taye Diggs and Evil Henchmen in Equilibrium
For making gunfights interesting.
7. Uma Thurman and Evil Henchmen in Kill Bill
For stylish gore.
6. Stephen Chow and Evil Henchmen in Kung Fu Hustle
For making me laugh.
5. Ziyi Zhang and Michelle Yeoh in Crouching Tiger, Hidden Dragon
For a double pack of female awesome.
4. Vincent Cassel and Evil Henchmen in Les rivières pourpres
For best use of a video game soundtrack.
3. Min-sik Choi and Evil Henchmen in Oldboy
For gritty reality. [Well, almost.]
2. Keanu Reeves and Laurence Fishburne in The Matrix
For the cult.
1. Maggie Cheung and Tony Leung Chiu Wai in Hero
For beauty. [Honestly, it could have been pretty much any of the fight scenes in Hero.]

I humbly submit for your consideration the Bourne vs Hitman fight in Bourne Identity. Because the pen is mightier than the evil little palm knife.
Also, of all the fight scenes in “Romeo Must Die”, you choose that one? Of all the Jet Li fight scenes in all the world, you choose that one?!
Hey, I like that scene! The hose is great. But I have to admit that I was torn between quite a few scenes in Romeo Must Die. In the end, it could have been quite a few scenes.
And I haven’t seen the Bourne Identity and therefore also not seen the fight scene.
Yes, I like that scene, too. But the fight on the stairs is funnier and the big fight at the end is better.
And I can’t find it on YouTube, but I remember Sammo Hung using a hose in “Martial Law”, and doing it slightly better. (The man also used Salami nunchakus – that’s how he rolled.) But, as I said, I have no proof, only my faded memories.

I don’t know about Sammo Hung in Martial Law. Never watched it. But Salami nunchakus sound awesome.
I don’t get your choice of Jet Li, either, but it’s ok. (I chose the dojo scene from Kiss of the dragon. Ingenious.). From Kill Bill I’d have taken the fight against Oren Ishi, I think.
And I added a scene especially for you. I wonder if you can find it on my list :P
I thought about the fight with Oren Ishii, but in the end it’s rather short and the whole thing with the Crazy 88 is just a tad more impressive.
